Chocolate Covered Toffee Nuts

Boy Fall has come and settled in nastily. Grim and gray, the sky was filled with ominous dark clouds. Sipping on hot tea and looking out the window, you could see the trees branches bouncing and swinging around crazily against the blowing wind in a dance of their own. With a closer look, one saw the pellets of rain coming down quickly and pounding on water drenched street. These were the days, where one favours some downtime and relaxation at home. With this time in hand, I quietly sort out what I could make with my ingredients for some munchies.

Grocery shopping this week, one could see a virtual cornucopia in fruits and veggies. Stopping by the toffee covered nuts, I often wondered how they prepared it. A light bulb went off in my head and off I went to make some.

To make the them, I first toasted some nuts. You could literally use any kind of nut you had in your pantry. Next, I did a dry caramel to coat the nuts with. When the nuts had cooled, they were then dipped into tempered chocolate. Once the chocolate had set, I then put the nuts in a bag with some icing sugar to coat them lightly.
