Honey Roasted Macadamia Nuts

In light of the raining day. I decided to make some Honey Roasted Macadamia Nuts. I had some sitting around in my nut collection in the fridge thus decided to use them. I first roasted the nuts. Once the nuts were roasted, I prepared the sugar glaze by melting the butter first with the sugar. Finally, I combined the honey with the mixture. I simmered the mixture until the butter, sugar and honey melted together and showed signs of caramelization. Once the syrup was a golden brown colour, I added the macadamia nuts. To cool the nuts when they were covered with the sugar syrup, I spread them on a baking sheet and separated them with a fork. DSC_0341

Honey Roasted Macadamia Nuts

1 cup macadamia nuts
1/2 cup sugar
1/4 cup honey
1/4 cup butter
1 1/2 tsp. salt

I found this recipe to be quite good, it has a rich buttery flavour but next time, I will maybe 1/2 the sugar glaze recipe as I found that the extra sugar coating became more of a brittle than honey roasted macadamia nuts. All in all, it is a recipe worth trying. As a side note, keep an eye on the nuts when toasting as they burn quite easily due to the high fat content in them.
