Buttermilk Cheddar and Chive Scones

In light of the recent baking of sweets, I decided to make something savory again as I did not want to go into sugar overload, hence I made some buttermilk scones.  I made some buttermilk cheddar and chive scones.  These were amongst a family favorite and devoured fast.  I tend to favour sharper cheddar cheeses as it had a stronger flavour.  With some extra chives I had also, I decided to add that into the scone batter for some extra flavour.

I first grated the cheddar cheese.  I next combined the flour and butter and hand mixed to a fine crumb like consistency.  This helped the scones become flakier.  Once that was complete, I added the remaining ingredients, such as cheese, salt, pepper, chopped chives and baking powder.  Last to come was the buttermilk as baking powder reacted quite fast when moist.  The biscuits were cut by a circular cutter, egged wash and baked at 350F for about 30 minutes.  It really depends on the thickeness of the biscuits thus use discretion on the cooking time of the scones.

3 cups all purpose flour

1 tbsp baking powder

1 tsp salt

2 tsp black pepper

1 stick well chilled unsalted butter

1 1/2 heaping cups of grated cheddar cheese ( I prefer sharp cheddar) or you could mix w/ Parmesan

3/4 to 1 1/2 cup buttermilk

1 large egg

Opt- you could add in bacon ( saute in pan and drain oil first)

The result was good, it was light and definitely more cakier than biscuits.  Next time, I will add some sauteed onion, bacon into these scones for more savoury taste.  These scones made a good snack for breakfast.  Enjoy.
