Christmas Baking-Gingerbread Cookies

Yay!!! I can see snow on the mountain tops now. The thermometer had definitely taken a plunge in the recent days. Instead of going out and hopping in my car, I now see people around the neighbourhood scrapping away at frozen ice particles :) during the early morning commute to work. I could actually see the frowns on their face. Deprived from sleep and now scrapping away at frost in the cold winter air. Brrrrrr….nothing warms up the tummy with a fresh cup of hot chocolate and cookies.

Once they were baked, I used royal icing to decorate them and off course little M & M’s were bonuses. I also applied the flooding technique.

Keys in Royal Icing for Flooding:
-Dilute royal icing until you see the icing flow but not runny
-Pipe design borders and design with royal icing first and then flood
-Once the cookie was flooded let dry prior to adding additional decorations

While flooding takes time and patience the end result are beautiful cookies. Great for stocking stuffers!!!

Gingerbread Cookie Recipe (found here)

3 cups all-purpose flour
1 1/2 teaspoons baking powder
3/4 teaspoon baking soda
1/4 teaspoon salt
1 tablespoon ground ginger
1 3/4 teaspoons ground cinnamon
1/4 teaspoon ground cloves
6 tablespoons unsalted butter
3/4 cup dark brown sugar
1 large egg
1/2 cup molasses
2 teaspoons vanilla
1 teaspoon finely grated lemon zest (optional)
